Eggplant Lasagna

Ingredients
1.5 Eggplants, sliced into "noodles"1 1/4 lb lean Ground beef2 c marinara sauce1.5 c part skim Mozzarella, shredded
Directions
Slice the eggplant using a mandolin to get even slices
Saute .5 yellow onion in 1 tbsp olive oil until soft, add in ground beef, season with salt, pepper, garlic salt if desired. Once beef is browned, add 1 c sauce. Put one layer of eggplant slices on bottom of a 9x13 baking dish, layer of beef/onion mix, sprinkle with cheese, repeat one more time. The top will be one last layer of eggplant slices, .5 c sauce and rest of the cheese. Bake in 375 degree onion until cheese is golden brown on top!
