Turkey Sandwhich & Tomato Toss

Ingredients
4 teaspoons light mayonnaise8 slices sourdough bread˝ lb thinly sliced roasted turkey4 slices Muenster cheese1 ripe tomato, thinly sliced4 leaves green leaf lettuce4 teaspoons whole-grain mustard---------------------------------------------------------------1˝ cups cherry or grape tomatoes, cut in half˝ medium cucumber, thinly sliced⅓ cup thinly sliced red onion⅓ cup balsamic vinaigrette
Directions
   Spread 1 teaspoon mayonnaise over each of
4 bread slices. Top evenly with turkey, cheese,
tomato and lettuce. Spread 1 teaspoon mustard
over remaining bread slices, and place,
mustard sides down, on top of sandwiches.

    Toss together tomatoes, cucumber, onion
and dressing in a medium bowl until well
blended. Pack evenly in 4 containers with
sandwiches.
