Chicken Club with Smoothie

8 slices center-cut bacon1 ripe avocado, mashed2 tablespoons fresh lime juice1⁄4 teaspoon salt8 slices sourdough bread, toasted1⁄2 lb sliced roasted chicken1 ripe tomato, thinly sliced---------------------------------------------------------------4 cups chopped seedless watermelon2 cups nonfat vanilla Greek yogurt
Cook bacon in a large nonstick skillet over
medium heat 6 to 8 minutes or until crisp; drain
on paper towels. Stir together avocado, lime
juice and salt. Spread avocado mixture on 4
slices bread. Layer chicken, bacon and tomato
over avocado mixture. Top with remaining
bread slices.

Combine watermelon and yogurt in a
blender. Cover and process until smooth,
scraping down sides as needed. Pour into
thermoses.
Note: Freeze thermoses overnight to ensure
smoothies stay cold.
