Ingredients
8 oz ground beef, 85%fat1.5 green bell pepper, diced1 medium onion, diced4 small carrots, diced1 cup chicken broth1 tsp chili powder1 tsp coriander1 tsp cumin1 tsp salt1 tsp black peppersprinkle of red pepper flakes1 28 oz can whole peeled tomatoes1 15 oz can kidney beans, drained and rinsed1 can corn, drained
Directions
Saute ground beef with carrots, onion and green pepper. When veggies are soft and meat is brown add spices. Toast slightly til spices are fragrant. Deglaze with 1 cup broth. Add 28 oz can of whole tomatoes. Bring to simmer. Add kidney beans and corn and simmer for about 40 minutes to bring flavors together. Let sit for about half an hour and warm to serve.
