Ingredients
1 1/2 to 2 lbs. lamb for stew with boneslrge onion3 large carrots sliced1 celery stick3-4 small potatos cut upchicken or beef broth (2 cups)1 tsp. thyme2 bay leaves 1/4 cup olive oil1 can (small) tomato pasteabout 8 Roma tomatos ( use whatever type of tomatos you have available).1/8 c. parsley driedadd 1-2 leeks if available.
Directions
Brown meat in olive oil. Set aside on plate. Add onions, carrots, tomatoes, potatoes. Cook for about 5 minutes. Add broth and seasonings. Bring to a boil and then turn down and simmer on low for 2-3 hours.
