Cheese, Beef and Zucchini Pie

2 refrigerate pie crusts1 lb lean ground beef1 large choppe onion1 ea Chopped Red and Green bell pepper3 large zucchini, sliced2 tbs flour2.5 Cups Mexican Cheese Blend4 eggs, beaten3 plum tomatoes, slice1.5 C Half and Halfsalt and pepper
Preheat over to 400 deg and place pie crusts in pie pans. Cook for 7 min. Remove from over and lower temp to 350
Cook ground beef and onion and peppers in skillet until cooked through. Add zucchini and cook 3 to 4 mintues longer. Remove from heat and stir in flour.
Layer beef mixture, cheese and tomatoes in partially baken crust. combine beaten eggs and half and half. pour over mixture in pan s. Bake 40 to 45 min or until knife inserted in center comes out clean. lET STAND 10 MINUTES.
