low-carb eggplant parm

Ingredients
1 eggplantgrated parmesean shredded mozzshredded colby jack2 tomatos 1 jar classico tomato saucepowdered garlicoregano
Directions
slice eggplant in thin pieces. make layer covering bottom of greased pan. spray slices with pam spray. sprinkle garlic, oregano (or spices to taste). sprinkle parmesan cheese. cover with small drizzle of tomato sauce. Then place chopped up tomato over slices. sprinkle mozzarella. sprinkle colby jack. repeat until top layer. after laying out tomatoes, cover with all of remaining cheese.
bake at 350 till golden brown and bubbling
