Ricotta Muffins (South Beach Diet Phase 1)

Ingredients
2 cups part skim ricotta cheese4 eggs2 tsp cinnamonbaking soda2 tsp vanilla extract5 - 8 packets of Splenda or other no cal sweetener to taste
Directions
Mix all ingredients well, pour about 2 tbsp per muffin into muffin tin, bake for 20 - 30 minutes until toothpick comes out clean, makes about 12.

Serving Size: Makes about 12, using 2 tbsp or so of batter per muffin
