Mediterranean Quinoa Salad

1.25 cups uncooked quinoa4 oz Athenos reduced fat feta crumbles1.5 cups seeded, diced cucumber.5 cups diced red onion(1) 14-oz can of Hunts diced tomatoes with oregano and garlic (drained)(1) 2.25 oz can of diced black olives (drained)1 tsp salt1/2 tsp oregano1 tbsp. olive oil
cook quinoa according to package instructions.
dice cucumber and red onions, salt with 1/2 tsp salt.
combine cheese, tomatoes, and olives with cucumbers and red onions. add remaining salt, oregano, and olive oil. mix thoroughly. mix in quinoa.
Serving Size: makes about 8 1-cup servings
