Santa Fe Beans and Rice

Ingredients
2 cups whole grain brown rice1 can black beans, drained1 cup corn1 can Rotel1 cup Salsa1 cup Fat Free Sour Cream2 cups 2 % Cheddar Cheese1 cup chopped green onions
Directions
Combine all ingredients except 1 cup of cheese. Bake at 350 degrees for 30 minutes. Sprinkle remaining cup of cheese on top and bake an additional 5 - 10 minutes.

    The rice didn't cook due to lack of moisture and time - I'll use cooked rice next time. I googled Rotel & found it's a brand name, so I used diced tomatoes & chilies. Having over come these problems, the result was fabulous and I would definitely make this recipe again. - 2/14/10
