Zucchini and Turkey Casserole

2.25 pounds ground turkey1 onion, dicedGarlic - 2 clovesZucchini - 6 cups diced (about 3 zucchini)3 cups Ricotta Cheese2 Cup Low Fat Mozzarella28 oz crushed tomato1 box - Italian Style Panko (Progresso)1 Cup Shredded Parmesan Cheese
In a large pan brown turkey with onion and garlic, drain. Return to pan, add zucchini and crushed tomato, mix well and let simmer. In a separate bowl, combine ricotta and mozzarella. Add to meat mixture and stir well. Put mixture in a roasting pan. Mix together the panko and parmesan and spread on top of meat and zucchini. Bake for 30 minutes in a 350 degree oven. Makes 12 servings.
