Tiffany's Stuffed Mushrooms

Mushrooms, fresh, 12 medium (remove)Garlic, 2 clove (remove)Red Ripe Tomatoes, .5 medium whole (2-3/5" dia) Onions, raw, .25 medium (2-1/2" dia) Sunflower Seeds, without salt, 1 oz Flax Seed Meal (ground flax), 1 tbsp Great Value Reduced Fat Parmesan Style Gated Topping, 2 serving (remove)Crushed Red Pepper Flakes, 1 serving
Preheat oven to 350. Wash mushrooms to remove dirt and debris. Remove Stems. Chop 1/2 stems of mushrooms, 1/4 onion and 2 cloves of garlic and saute with with olive oil spray on medium high heat. Dice half the tomato and when saute mixture has cooked down a little add tomato in and it should cook down with other stuff to make a paste. While this is cooking down, put mushroom caps on pan with aluminum foil and spray also with olive oil spray. Place saute mixture in bowl. Mix 1 ounce of sunflower seeds, 1 Tbsp of ground flax seed and 2 Tbsp of Reduced fat Parmesan Cheese. Scoop by teaspoon and fill caps. Bake on 350 for 10 minutes, checking half way through cooking time to make sure mushrooms still set. Remove from oven and allow to set for 5 minutes. Distribute and enjoy! MMM MMM Good!
