Ingredients
1 medium size eggplant, washed & sliced1 ripe beefsteak tomato, washed & sliced thin3 baby bella mushrooms, washed & sliced thinVeggie Mozarella cheese shreds (galaxy foods)mixed seasoning: No salt (no sodium), pepper, garlic salt & italianherbseasoningflaxseed oil, brushed both sides eggplant slices
Directions
Brush both sides eggplant slices with flaxseed oil from
capsules. Sprinkle top side with seasoning and bake
at 350 deg F for ten minutes.
Remove from oven & top with sliced tomato and mushroom pieces. carefully arrange mozzarella on top.
Bake again 8 minutes at 375 deg F.
Remove from oven & cool.
