Island Pork Tenderloin

16 oz pork tenderloin, lean0.5 tsp salt0.4 tsp pepper0.5 tsp chili powder0.5 tsp ground cumin0.5 tsp cinnamon2 tsp olive oil0.25 c brown sugar packed0.5 T fresh garlic, finely chopped0.5 T Tabasco sauce
1. Preheat oven to 350 degrees.
2. Stir together salt, pepper, cumin, chili powder, and cinnamon, then coat pork with the spice rub.
3. Heat 1 T oil in a 12-inch skillet over moderately high heat and brown pork, turning about 4 minutes
4. Stir together brown sugar, garlic and Tabasco and pat onto top of tenderloin. Place pork in roasting pan and cook in the oven for 20 minutes.

This is a FABULOUS P90X recipe. We had it last night for the first time and the pork flavor was incredible!! I cooked it in a pyrex baking dish in the oven for 1 hour covered in foil. When I pulled it out, I sliced the meat in the pyrex dish and let the slices soak up some of the juice. YUMMY! - 4/25/08

How delicious was THAT! We loved it. I made it for my hubby and my one year old son. We will definitely be having it again. I cooked mine for 30 minutes, then put foil over top and dropped the temp to 325 for another 12-15 minutes. Served it with rice pilaf and broccoli. Very yummy! - 8/23/10

I made this recipe for my husband tonight it was really good. I cooked it for 1 hour at 350 covered it with foil and it turned out great really juicy and I loved the Tabasco because it gave it that spicy and sweet taste with the brown sugar. I am not much of a cook and it was really easy even for me - 6/11/20
