GInger Honey Peach Chia Jam

Ingredients
4 large peaches, diced (with skin on or off if preferred)4 tbs Honey (local if you can get it)1 tsp ground ginger2 1/2 tbs chai seeds
Directions
Add honey and peaches to a pot and heat covered on low for 1 hour. Stir at least 2 times doing that time. Once peaches are soft, use an immersion blender (or what ever tool you prefer: blender, food processor, etc.) to puree. Leave on the stove on low and add ginger and chia seeds. Cook for an additional 30 minutes. Add more seeds if you prefer a thicker jam (will change the nutritional info just slightly).
