Epicure's Butter Chicken

Ingredients
2 lbs boneless, skinless chicken breast, diced1 1/2 tbsp extra-virgin olive oil1/2 cup white onion, diced1 package Epicure Selections What's For Dinner Butter Chicken Seasoning Mix1/2 cup diced tomato1 cup water1/2 cup cream (or thick yogurt)
Directions
1. Heat 1 tbsp olive oil in a large skillet and brown diced chicken breast. Remove from pan and set aside.
2. Heat remaining 1/2 tbsp in skillet and add onion. Stir fry for 3 minutes, until onions are softened.
3. Sprinkle contents of seasoning package over onion and cook for 1 minute. Add diced tomato and water to the pan and bring to a boil. Boil for 3 minutes.
4. Add chicken back into the pan, cover and simmer for 10 minutes. Remove from heat and stir in cream just before serving.

Serving Size: Makes 6 - 1-1/4 cup servings
