Ingredients:Banana, fresh, 2 cup, mashed Baking Soda, .5 tsp Baking Powder, .5 tsp Vanilla Extract, 1 tsp Cinnamon, ground, 1 tsp Nutmeg, ground, 1 tsp *Sunflower Seed, Raw 4 TBSP*Coconut Oil Organic Virgin (3 TBLS)*Bob's Red Mill 100% Stone Ground Whole Wheat Pastry Flour, 2 cup *flax organic ground 2 Tbsp, 2 tbsp Water 6 TBSP*Trader Joe Organic Brown Sugar, 4 tbsp *Sun Crystal 1 TBSP (can sub more brown sugar or a little stevia)
First make "flax eggs" by combining ground flax with 6 TBSP of water put in fridge to set. Preheat oven to 300 F. spray small loaf pans with cooking spray. Combine all dry ingredients (but leave some sunflower seeds for the top of the loaves), then add wet ingredients and stir until wet, don't over mix. Bake on preheated oven at 300 F for 45-55 minutes. Bread is done when toothpick comes out clean.
