Chocolate Zucchini Brownies

Ingredients
1 tbsp Kahlua (or coffee)1 tbsp vanilla extract½ cup brown sugar6 packets Truvia (or ¼ cup sugar)½ cup prune puree1 cup spelt flour3 tbsp ground flax seed½ cup cocoa½ tbsp baking soda¼ tsp salt2 cups shredded zucchini1 (3.5 oz) bar bittersweet chocolate, chopped small¼ cup chopped hazelnuts or walnuts (optional, not included in NI)
Directions
Preheat the oven to 350 F and line an 8" pan with parchment paper.
In a large bowl, mix together the Kahlua, vanilla, sugar, Truvia and prune puree.
Add the flour, cocoa, baking soda and salt and gently stir until combined. Do not over mix!
Fold in the zucchini, chocolate chips and nuts (if using).
Bake for 30 - 35 minutes.
Store in an airtight container in the refrigerator.
