Sausage from Scratch

Ingredients
1/2 pound ground turkey1 tbsp. diced yellow onion1 ½ tsp. minced garlic½ tsp. oregano¼ tsp. sage¼ tsp. red pepper flakes (you can use paprika instead for milder flavor)¼ tsp. ground black pepper¼ tsp. saltCooking spray or Olive Oil Spray
Directions
In a bowl, combine turkey, onion, garlic, oregano, sage, red pepper flakes (or paprika), black pepper, and salt. Use a fork or clean hands, mix all ingredients together well. Separate your meat mixture into four equal portions. Roll each portion into a ball. Place each ball individually between two pieces of wax paper or cellophane wrap, flatten balls into patties.
Mist a fry pan or electric skillet with cooking spray or olive oil. Heat skillet on medium high until a water droplet will sizzle when added to pan. Place patties in the pan and cook for 2 minutes on each side, or until center of patty is no longer pink. If patty is browning faster than the center is cooking, turn your heat down to medium.

Serving Size: Makes 4 patties or 1/2 pound ground sausage
