Whole Wheat Carrot Applesauce Muffins

Ingredients
1.5 cups whole wheat flour1 tsp. baking soda1 tsp. ground cinnamon.5 tsp. ground ginger.5 tsp. salt8 TBSP. Brummel & Brown yogurt spread.5 cup Splenda1 large egg1 tsp. pure vanilla extract1 cup unsweetened applesauce.75 cup grated carrots
Directions
Preheat oven to 350 degrees. Line 12 cup muffin tin with paper or foil liners. Sift together flour, baking soda, cinnamon, ginger, and salt. In a large bowl, beat together yogurt spread and Splenda until creamy. Beat in egg and vanilla. Combine with dry ingredients. Fold in applesauce and grated carrots. Divide the batter evenly among the muffin cups. Bake for 22 minutes.
