1 avocado1.5 cups chickpeas (garbanzo beans)1 tbsp extra virgin olive oilWater to thin out as necessary10 mint leavesjuice of 2 limes1 clove garlicsalt and pepper to taste
1 You can use a tin of chickpeas or cook your own - I cooked some and was able to make 2 batches of hoummous, a chickpea stew and freeze the remainder
2 Put all the ingredients into a blender, add water to thin it out and help the blender to break the chickpeas down, it will take a few minutes for the hoummous to become smooth but very worth it
