Cuban Style Braised Fish

Cod (fish), 24 oz(1 1/2 lbs)Diced Tomatoes, 1 can (14 oz) with chile's or Mexican style if availableOnions, raw, 1 medium dicedGarlic, 2 clove mincedChicken Broth, 1/2 cup (4 oz)*Spanish Olives w/pimento - 10 quarteredAlmonds - sliced, 1 tbsp toasted
Heat onion and garlic in large skillet about 5 minutes. Stir in tomatoes, broth and olives and heat until simmering. Cut fish into 4 portions and arrange in skillet. Cover and cook until fish flakes with a fork, about 8-10 minutes. Place fish on plate and cover with braise then sprinkle with almonds. Serve with some long grain brown rice and a fresh green vegetable.
