Dijon Roasted Cabbage with potato and onion

Ingredients
1 medium head green cabbage, core removed, cut in small wedges5 potatoes washed and cut in wedges1 medium sweet onion cut in wedges3T EV Olive Oil2T Dijon Mustard2 Cloves garlic, minced1t pepperSalt to taste2t caraway seeds
Directions
Whisk together oil, mustard, garlic, pepper, salt and caraway. Brush over chopped veggies and place on rimmed baking sheet. Cover with foil and roast 45 minutes at 400. Remove foil and roast an additional 10 minutes
