Zucchini Applesauce Muffins

Nonstick cooking spray or butter for pan 6 large eggs, room temperature 1 cup oil1 cup unsweetened applesauce1 1/3 cup sugar4 teaspoons pure vanilla extract6 cups grated zucchini (from 1 large zucchini) 4 cups whole-wheat flour 2¾ teaspoons baking powder1 teaspoon coarse salt4 teaspoons ground cinnamon
1.Preheat oven to 375 degrees F. Prepare pans with cooking spray or greasing with butter.
2.In a large bowl beat the eggs, then blend in oil, applesauce, sugar and vanilla. Fold in zucchini. Using a metal sifter over the bowl, add flour, baking powder and salt. Stir until the mixture is not quite together then add chocolate chips.
3.Fill muffin tins ¾ full and bake for approximately 15 minutes, depending on the size and shape of your pan.
