Maple Salmon Fillet with shrimp

Ingredients
4oz Salmon fillet (I get the bag of individually frozen fillets and thaw before cooking)6 shrimp, deveined and no tails (optional. Again, I buy frozen)dash saltdash pepper1/4 tsp thyme (Italian Seasoning can be substituted here)1/4 tsp garlic powder1 TBSP pure maple syrup1/4 medium size yellow onion, sliced1 pat of butter
Directions
This can be grilled in a foil pouch or baked in a foil-lined baking pan in oven at 400'.

Recipe makes a single serving but can easily be multiplied for more. (Note: My 2 young boys share one fillet at supper)

Place salmon on foil. Add seasonings. Sprinkle on maple syrup, covering entire fillet (and shrimp).
Surround salmon with onions and shrimp (if you put them on top, onions won't caramelize).
Slice pat of butter into chunks, distribute over onions and top of salmon.
Close foil package (cover with foil if baking in oven) and cook.
Check every 10 minutes. Salmon is done when it flakes easily with a fork.

I usually serve this over a serving of whole grain rice with a side of green beans.

    Well this recipe looks like it will make a great meal and I have some rice made and I will cut up some freah broccoli and steam it - 8/22/10
