Vegan Chili

Ingredients
1 cup chopped carrots1 stalk celery, chopped1 med red onion, chopped1 tbs olive oilbox of Lightlife Smart Ground, Mexican style1 can black beans1 can pinto beans1 can kidney beans1 can tomato sauce (I use Muir Glen)1 can diced tomatoes (Muir Glen)1 cup water1 tsp garlic powder1 tsp chipotle chili powderSalt to taste
Directions
Warm olive oil over medium high heat; saute carrots, celery, and onion. When soft, add veggie crumbles and stir to combine.

Add beans, tomatoes, and water, combine. Add spices and bring to a boil. Reduce to simmer for 10-15 minutes, as desired.
