Olive Oil Potato Salad

Ingredients
about 5 medium red skinned potatoes, diced in 1/2" cubesFinely chopped OnionFinely chopped fresh herb, thyme,parsley, what flavor you like1-2 Tbsp Olive Oil1/2-2 garlic cloves (depends on how much you like garlic)1 Tbsp saltsalt and pepper to taste
Directions
Bring to boil diced potatoes covered by water with 1 Tbsp salt in pan.
Once boiling, simmer until fork tender about10 min.
Cool off in iced water to stop cooking.
Let dry or dry potatoes when ready to use.
Mix sauce together while the potatoes cook.
Place oil, 1-2 T onion, 0.5 garlic or more to taste, herb chopped, 1 T that you like, Parsley,thyme.
Pour over the potatoes and either served warm or cold.
Salt and pepper to taste.
