Crustless Leek Quiche

Ingredients
8 slices of low sodium bacon diced- cooked- drained1.5 C Leek sliced and diced up1 C onion - diced1 T olive oil2t grainy mustard1 t oregano - dried - leaves (recipe says ground because that was the only choice.3 eggs beaten or equivalent liquid egg sub - recipe was calculated with 3 large eggs3/4 C Fat Free Half and Half8 ounces shredded low fat swiss cheese
Directions
Cook bacon- drain and set aside.
Saute leek and onion in olive oil til tender and allow to cool.
Combine remaining ingredients and whisk together. Add leek and onion to mixture and pour into a greased quiche pan or pie plate.
Distribute bacon on top.
Bake at 350 degrees for 30 minutes or until set
