Super Foods Chicken Soup

Ingredients
1 carton chicken broth1 carton water2 pieces of dark meat chicken2 carrots, chopped in 1/4 in pieces2 celery stalks, chopped in 1/4 in pieces1 onion2 Tbsp butter1.5 cups kale, finely chopped2 Tbsp minced garlic or 2 clovesseasoned salt, to tastethyme, to tastecayenne pepper, to taste
Directions
In a large pot, pour the chicken broth & then fill the empty carton with water & pour in 1 carton of water. Bring to boiling. In a frying pan, heat butter, then fry carrots, celery, & onion. Add quinoa & kale to pot of boiling water. Add veggies from frying pan to the pot. Boil for 30-40 minutes, until the quinoa is tender. Thicken with cornstarch & water. Add garlic, seasoned salt, thyme, & cayenne to taste.

Serving Size: 6 large bowls (16 oz or 2 cups)
