Zucchini Gratin

3 small zucchini, sliced1 yellow onion, diced2 cups whole milk1/2 cup bread crumbs1/4 cup whole wheat flour3 eggs, beaten3/4 cup Parmesan cheese1 teaspoon salt1/2 teaspoon pepper3 teaspoons fresh thymeExtra-virgin olive oil
Preheat oven to 350 degrees. Coat a 9-inch square baking dish with olive oil or cooking spray.
Saute the onion over low heat until soft, but not brown. Add the zucchini and saute for 2-3 minutes.
In a large bowl, combine 1 cup of milk with the bread crumbs and flour. Add a splash of olive oil, eggs, thyme, 1/2 cup cheese, salt and pepper. Stir until combined. Add the onion and zucchini mixture and combine. Pour mixture into prepared dish. Smooth the surface and pour the remaining milk over the top and sprinkle with the remaining cheese.
Bake uncovered for about 1 hour, until golden brown on top.
