Vegetarian Thai Coconut Soup

Ingredients
one can coconut milkcoconut oil or olive oil 1 tbsp3 cloves minced garlichalf red onion sliced1 cup sliced shiitake mushroomshalf a jalapeno pepper1.5 cup vegetable brothfresh ginger 5-6 slices1 Lime squeezed1 16 ounce package of TofuCilantro as much as you want
Directions
Sautee onion, garlic, mushrooms in oil for a few minutes. Reduce heat to low and add the vegetable broth, coconut, and remaining ingredients except for cilantro.
Simmer over low heat for 15 minutes. Stir in cilantro right before serving
