Dry Ingredients: 1 Cup Whole Wheat Flour1/2 Cup Minute Oats/Steel Cut Oats1 Tbsp Chia Seeds1/2 Tsp Baking Powder1/4 Tsp Baking Soda1 Tsp Cinnamon1 Tsp Pumpkin SpicePinch of SaltSunflower and/or Pumpkin Seeds (optional)Wet Ingredients: 2 Egg Whites1 Cup Pumpkin Puree1 Cup Unsweetened Applesauce1/4 Cup Organic Agave Nectar (or honey/maple syrup)2 Tsp Vanilla
Preheat oven to 350 F. Combine dry ingredients in one bowl and wet ingredients in another bowl. Once mixed, add wet ingredients to dry and stir until no flour is visible. Pour into your choice of muffin tin (regular or mini). Add sunflower and/or pumpkin seeds on top for garnish. Bake for 20 mins or until toothpick comes out dry in the middle of muffin.
