egyptian eggs

Ingredients
1 peice of whole wheat bread1 eggshredded cheddar cheese (abouht an 1/8 of a cup to sprinkle)
Directions
Cut a square out of the middle of the bread. Spray a pan with non-stick spray. Put the bread onto the pan and crack the egg into the middle of the bread where the hole is. Let the egg cook (like its over easy) enough so that you can flip the bread over without it falling out. i suggest cooking on medium low heat. Continue to turn the bread and egg until the bread is like toast and the egg is as done as you want it (over easy to over hard) then sprinkle the cheese on so that it can melt for a few seconds and then enjoy! The piece of bread you cut out of the middle can also be toasted and used to soak up the egg if you like your eggs over easy.

    This is my grandmother's recipe and she called them Egyptian Eggs too. She made these for us on special mornings 50 years ago. I thought they were magic. - 4/15/10
