Pumpkin Oatmeal Breakfast Cookies

1/2 cup pure pumpkin1 overly ripe banana1/2 cup egg whites1 tsp vanilla extract1/2 cup whole wheat flour1 cup rolled oats1/4 cup finely chopped pecans2 scoops vanilla protein powder1/2 cup granulated stevia1 T cinnamon1/2 T pumpkin pie spice1/2 tsp baking powder1/2 tsp baking soda1/4 tsp salt
1. Preheat oven to 375
2. In large bowl, combine flour, oats, pecans, protein powder, stevia, cinnamon, pie spice, baking powder, baking soda, and salt. Set aside.
3. In another bowl, mash banana. Add pumpkin, egg whites, and vanilla.
4. Add pumpkin mixture to bowl with dry ingredients. Mix gently until fully combined and dough is formed. (Don't over mix)
5. Spoon equally onto coookie sheet coated with no stick spray.
6. Bae 10-12 minutes or until slightly brown on top. Remove and allow to cool completely.
