chicken con salsa verde enchiladas

chicken (breast or tenders)1 jar green salsa1/2 cup waterdiced onionsshredded cheeserice waterred salsa
dice chicken and cook 3/4 through, add jar of green salsa and 1/2 cup water and simmer 20 min til chicken cooked through (covered)
meanwhile cook rice with 1/2 salsa, 1/2 water for the water measurement
use 1.5 to 2 tbs rice mix in a tortilla, spoon one slotted spoon of drained chicken on the rice, sprinkle a few onions on and a bit of cheese, roll and place in pan - repeat for remaining tortillas
pour remaining green salsa over the completed tortillas and sprinkle with cheese
bake in 350 degree oven for 20 min or until hot and bubbly but not brown
serve with a couple tbs of sour cream
