Cilantro-Lime Jalapeno Chicken Salad

Ingredients
3 4oz boneless skinless chicken breasts1/4 c diced red onion1 jalapeno, seeded & dicedjuice of 1 lime4 tbps fresh cilantro1 tbsp ground cumin (or less to taste)1/3 c light mayo1 tbsp dijon mustard
Directions
Poach chicken breasts (careful not to overcook), then shred chicken (I used the Kitchenaid for this). Mix all ingredients (except chicken) well in a large bowl. Combine with chicken & chill at least one hour.
