Chickpea and Grape Salad

Ingredients
1 can chickpeas, rinsed and drained1/4 c. diced carrots1/2 c. diced cucumber2 tbsp. honey roasted sunflower seeds3/4 c. halved green grapes1 oz. shredded cheese (optional)3 tbsp. mayo1 tbsp. red wine vinegar2 tbsp. dried parsleysalt & pepper
Directions
Combine all ingredients, mix well. Eat immediately or store in refrigerator in a tightly covered container. Serve as a sandwich, over a salad, with crackers, or with a fork!
