Foutz Homemade Rice Pilaf

Ingredients
1.5 cups white rice, uncooked2 large celery stalks, finely chopped1/2 to 1 cup white or yellow onion, finely chopped1/4 cup margarine1 cup carrots, chopped1/2 cup peas3 cups hot chicken broth (may use veg. broth)Other veggies, if desired. (Broccoli and corn make great additions, or sometimes red peppers.)
Directions
In a large pot or saute pan, saute onions and celery in margarine for approximately 5 minutes. Stir frequently. Add rice, and stir mixture until rice is golden brown. Add and stir in other vegetables. Pour in HOT broth, stir briefly. Cover and cook 25-30 minutes.
