Buckweat zuccini muffins

2 cups Buckweat flour1/2 cup bruwn sugar1/4 cup granulated sugar2tsp baking soda2 tsp ground cinnamon1/4 tsp salt3/4 Almond milk1/2 cup canola oil1/2 cup unsweetened applesauce2 tsp vanilla extract1 apple chopped1/2 cup shredded coconut1/2 raisins1 cup grated zuccini1/2 chopped pecans
Preheat oven to 350F.
line tin with paper liners. in a medium bowl, whisk together flour, sugars, baking soda, cinnamon and salt. in a seperate bowl wisk together milk, oil, applesauce and vanilla.
stir in apple, coconut, raisins and zuccini, add flour mixture stir just until moistened and spoon into papper cups. sprinkle chopped pecans and bake about 30-35 minutes.
