Bavarian Pork Chops with sweet potatoes

2 cups refrigerated sauerkraut1 large unpeeled apple, chopped (1 cups) 1 medium onions, chopped1/4 cup uncooked quinoa4 pork loin or rib chops, 3/4 inch thick 1/3 cup barbecue sauce 1 medium sweet potato sliced
1. Heat oven to 350°F.
2. Spray a casserol dish with non stick cooking spray and line with the sweet potato slices in the bottom. Mix sauerkraut, apple, onions and quinoa and spread on top of the sweet potato slices. Place pork on sauerkraut mixture. Spoon barbecue sauce onto pork.
3. Cover and bake 1 hour 15 minutes to 1 hour 30 minutes, uncovering for last 15 minutes, until pork is slightly pink when cut near bone, potatoes are soft, barley is tender and liquid is absorbed.
