Chicken with Spinach, tomato, onion and garlic Quinoa

1-2 large bags of spinach or baby spinach4-5 boneless skinless chicken breasts1 box of uncooked Quinoa3 cans diced tomatoes with garlic and onions7-8 oz bag of shredded swiss or mozzarella cheese (your preference, it is good with either)Salt and pepper to tasteNon-stick cooking spray
Heat oven to 350 degrees.
Salt and pepper both sides of chicken breasts. Spray dish with cooking spray and layer ingredients as follows:
Spinach
Quinoa (uncooked)
Tomato mixture
Chicken breasts
Tomato mixture
Cheese
Tomato mixture
Cover with foil and bake for 45 minutes. Remove foil and bake for remaining 15 minutes. Let cool for 5-10 minutes before serving
