Bananas, Applesauce, Vanilla, Cinnamon, and Quick Oats. Cocoa is optional.
Preheat oven to 350. In a large bowl, mash bananas. Add applesauce, cinnamon, vanilla and cocoa, if desired. Stir in quick oats, enough that the mixture isn't too wet or too dry. Drop spoonfuls of the mixture onto a baking sheet lined with parchment paper, and bake for 15-20 minutes until cookies are firm.
