Pumpkin & Black Bean Soup

Ingredients
1 Tbsp olive oil5 green onions slides (whites and light green; reserve greens) 1 red bell pepper chopped1 1/2 tsp. ground cumin3 cloves garlic minced1/2 tsp thyme2 cans black beans, rinsed and drained1 can pumpkin puree1 can diced tomatoes with juices1 can chicken OR veg broth1/2 cup water1/2 tsp peppper3/4 tsp sea salt (or a little less)1/8 tsp cayenne pepper
Directions
Heal oil; Add onion, garlic and peppers cooking 4-5 minutes until soft. Stir in cumin and thyme cook for 1 minute. Add beans, pumpkin, tomatoes (undrained), broth and water; bring to boil. Reduce heat and simmer for 10 min. Stir in salt and cayenne pepper. Top with greens of onion (optional) before serving.
