Paleo Pumpkin Muffins

Ingredients
12 eggs1 3/4 Cups canned pumpkin1 Cup coconut oil (cold pressed, unrefined), melted1 Tbs. vanilla extract1/2 Cup Pure Maple Syrup1 Cup Coconut Flour1 tsp. sea salt1/2 tsp. baking soda2 Tbs. Pumpkin Pie Spice1 Cup chopped walnuts (or other preferred nut)
Directions
Preheat oven to 350 degrees. Whisk eggs, pumpkin, oil, vanilla and syrup. Sift flour, salt, baking soda and spices and stir to combine. Then mix in chopped nuts. fill lined muffin cups with about 1/4 cup of batter. Bake 35-40 minutes. makes about 24 muffins.
