Paleo Chicken tortilla soup

1 pound cooked and shredded/diced chicken2 24oz jars (or equivalent) diced tomatoes in juice2 cups chicken bone broth1 finely diced jalapeño pepper2 coarsely chopped Poblano peppers1 medium/large onion diced4 cloves garlic chopped fine2 tbsp adobe chile sauce (to taste!) Mexican seasoningsI used ancho chili powder, garlic powder, onion powder, red pepper flakes, oregano and cayenne powder to taste. I would say start with 1 teaspoon of each and taste or use your own paleo taco seasoning!
Sautéed garlic onion and peppers in a large stock pot until translucent. Take half the mixture and blend until pulverized, I used my stick emmersion blender. Return mixture to pot(this makes it a bit thicker). Add remaining ingredients EXCEPT chicken. Let simmer for 15 minutes or until peppers are soft. Add chicken and heat through. Serve and enjoy with some avocado!
