Kale & Barley Salad

Ingredients
1 head kale, stems removed & leaves ripped1 cup barley, cooked and cooled1/4 red onion, sliced thin2-3 tomatoes, diced1/2 large cucumber, dicedHandful fresh cilantro1/4 cup olive oil1/4 cup red wine vinegar1/4 cup apple cider vinegarSalt & pepper to taste
Directions
Mix all your vegetables and barley together, whisk olive oil and vinegar and pour over. Serve immediately, or refrigerate for up to one week.
