Watermelon and Feta Orzo Salad

Ingredients
1 cup orzo pasta1/2 cup Lemon-Shallot Vinaigrette3 cups seeded and diced watermelon4 cups firmly packed arugula4 oz. crumbled feta cheeseLemon-Shallot Vinaigrette:1/2 cup fresh lemon juice1 minced shallot1 cup olive oil1/4 cup ,minced fresh flat-leaf parsley1 tbsp. honey1 tbsp. whole grain Dijon mustardsalt and pepper to taste
Directions
1. Prepare pasta according to package directions.
2. Toss together hot pasta and Lemon-Shallot Vinaigrette in a large bowl. Cover and chill pasta mixture 3 to 24 hours.
3. Gently toss together watermelon, arugula, feta cheese and pasta mixture just before serving; add salt and pepper to taste.
