Gumboish Chicken Stew

2 TB Olive Oil2 TB flour1 bell pepper, chopped1/2 vidalia onion, chopped1/2 ts dried oreganosalt and pepper3 cups water5 oz frozen okra4 oz andouille sausage or (even lower cal) italian turkey sausage2 chicken breasts or the white meat from a rotisserie chicken, shredded2 cloves galic, minced1 can diced tomatoes with onion, garlic, and oreganocayenne pepper
Heat oil in large sauce pan. Add flour and cook until very light golden. Add chopped bell peppers, onions, garlic, oregano, and salt and pepper and saute until onions are translucent. Add the rest of the ingredients and slowly heat to a simmer. Allow at least a half an hour simmer time to ensure a delicious flavor.
Goes great with a little fresh grated parmesean cheese and/or cornbread.
Makes 6 large portions and terrrific the next day!
