Pesto White Bean Soup

Ingredients
1 medium onion, diced2 cloves garlic, minced1 Tbls Italian seasoning1/4 tsp red pepper flakes1 tsp sea salt1/2 tsp ground black pepper1 (28 oz) can diced tomatoes2 (15 oz) cans white beans, rinsed and drained6 cups chicken or vegetable stockJuice 1 lemon1/2 cup prepared pesto, plus more for servingGrated Parmesan cheese for serving
Directions
Add all the ingredients in the slow cooker except for the pesto and Parmesan. Turn the cooker on low and cook 8 hours or high for about 4 hours.

When you are ready to eat, stir the pesto into the soup. Serve topped with an additional dollop of pesto if desired and a sprinkling of Parmesan.
