Beet Spinach Salad with Lemon Dressing

Ingredients
beets, spinach, red onion, walnuts, cider vinegar, lemon, olive oil.
Directions
Roast 1-1/2 hours beets drizzled with olive oil at 375 degrees. Peel beets, cut1/4 in thick after cutting in half. Quarter and slice red onion, toss with beets. Comine olive oil, vinegar, and lemon juice, whisk, toss with beets and onion.
